A while back, we discovered that ALDI had a Key Lime Cake Mix and a Lemon Cake Mix from their Live G Free line. We bought them with the intention for making an Easter cake with one, but for some reason that didn’t happen. A few weeks ago, we celebrated Nikki’s birthday and she decided it was time to use the mix. My mom recently got a a mini bundt cake set for her Instant Pot. Nikki decided on Instant Pot Key Lime Cupcakes.
Not only is this recipe gluten-, soy-, & dairy-free, but it’s also wheat-free and nut-free.
-1 box Live G Free Key Lime Cake Mix
-2/3 c Water
-1/2 c Oil
-2 eggs (egg substitutes can be used)
Combine cake mix, water, oil and eggs in mixer.
Pour batter into cupcake silicone molds/bundt cake mold.
Add 1 cup of water to Instant Pot.
Place molds into Instant Pot.
Put Instant Pot on Cake setting.
Optional: This cake mix comes with its own icing (which we didn’t know until we opened the box). To use this icing, just add water to the icing mix and blend. My mom used too much water and it was the wrong consistency. Since we didn’t know the mix included its own icing, we had previously bought icing.
Once key lime cupcakes/bundt cake have cooled, spread icing.
Nikki loved these Instant Pot Key Lime Cupcakes! The icing she used has sea salt in it, so paired really well with the key lime flavor. I don’t care for key lime pie, but I tried a bite and really liked it.
