Easy Yogurt Bark (GF, DF, SF, Vegan)

Someone pointed out that we’re already halfway through the year and I can’t wrap my mind around it. Of course, I know it’s June, but I didn’t think about it being the halfway point. Nikki said she saw someone post a countdown to Halloween. It’s 92 degrees, people. Let’s not skip Independence Day or Labor Day weekend. Let me enjoy my summer.

Speaking of Independence Day, I’ve got the perfect cool treat for your festivities! Even better, it’s easy to make and uses few ingredients. Not only is it healthy, it’s also vegan, gluten, soy, and dairy-free.

Note: it doesn’t have to be just for July 4th. It’s perfect for anytime in the Spring or Summer.

Ingredients

3 cartons of Silk vanilla almond dairy free yogurt alternative

Handful of blueberries

Handful of raspberries

4 large strawberries

Strawberries
You could get fancy and make them stars.

 

Blueberries
Just a handful will do.

 

As you can see, there are no raspberries pictured. We decided to skip them since we bought 3 packages of strawberries and two packages of blueberries (they were both on sale).

Nikki attempted to cut a star into a strawberry and it didn’t even come close. Oh, whale. If you’re craftier with your food, then by all means make them STARberries. (I’m sorry for that dad joke).

Instructions

On a baking sheet, place parchment paper.

Scoop out containers of yogurt alternative. Smooth it out with the back of the spoon.

Place fruit on top of yogurt alternative spread. Bonus points if you make it look like a flag (this is where the STARberries come in handy).

Place in the freezer until solid.

After removing from freezer, let thaw at room temperature for a few minutes so that it’s easy to slice/break into pieces. Since it’s bark, we decided to just break them into pieces since it doesn’t have to be perfect.

Note: We used 3 cartons of the yogurt alternative. If you want thicker yogurt bark, I would do at least 4 cartons. Also, if you need to make a bigger serving, you may need even more.

This recipe is really simple and takes no time at all! It’s an great recipe to make with kids too.

 

If you’re serving yogurt bark at a cookout or party, be sure to give yourself enough time to allow the bark to solidfy. If you have leftover yogurt bark, place back in the freezer. We made the mistake of putting it in the fridge and it melted somewhat (we caught it before it turned back into a yogurt alternative).

  1. Yum, yum, yum Sam and seriously, if someone is going to go to all that trouble to turn strawberries into starberries, it just means that you have to wait so much longer before you can actually eat some of the deliciousness. Does the recipe work with normal yogurt too?

    • LOL, someone with extra times on their hands or that housewife that has to have the perfect dessert for all her parties. I would think it would. They’re the same consistency, just one doesn’t have dairy.
