Carrot Cake Protein Smoothie (GF, DF, SF,Vegan)

Several weeks ago, I held a poll across Facebook, Twitter, & Instagram to help me pick the next dessert we tried. Overwhelmingly, the No Bake Protein Fudge Bars won. The second highest vote getter was the Carrot Cake Protein Smoothie. As much as I love fudge, I also really wanted to try this recipe, as did Nikki.

This recipe was inspired by Arman from The Big Man’s World. The Carrot Cake Protein Smoothie is vegan, gluten-, dairy-, and sugar-free. We tweaked the recipe slightly to make it soy-free as well. As with most of Arman’s recipes, it doesn’t have many ingredients and is easy to make.

Ingredients

-1/2 c rolled oats

– 1 small carrot, chopped (can use 1/4 c mashed carrots)

– 1-2 tbsp granulated sweetener of choice OR 5-6 drops liquid sweetener of choice

-1-2 tbsp chia seeds or ground flax (can use LSA mix)

-1 tsp cinnamon

-1 tsp mixed spice

-1 tsp vanilla extract

-1 scoop vanilla protein powder (optional)

-1/2-3/4 c milk of choice

-1 tsp shredded unsweetened coconut (optional)

 

Here comes the super easy part. This recipe really takes no time at all, which is perfect if you’re on the go!

 

Instructions

-Combine all ingredients in a high-speed blender; blend until desired consistency is reached.

-Pour into glass

-Top with shredded coconut if desired.

See? Super easy and fast. It’ll take you longer to clean up than it takes to make the Carrot Cake Protein Smoothie.

Pro tip #1: If you want a thinner consistency, use 3/4 c milk of choice.

Pro tip #2: If you’d like a thicker consistency, you can put it in the fridge for 20-30 minutes.

 

In order to make this smoothie soy-free, we used a dairy-free milk that Nikki often drinks that’s also soy-free. In place of a liquid sweetener, we used maple syrup. As you may remember from the post about the fudge bars, we discovered the Bob’s Red Mill Vanilla Protein powder contains chicory root. Chicory root isn’t FODMAP friendly and can cause stomach discomfort. We found another vanilla protein powder that’s gluten-, soy-, & dairy-free and doesn’t contain chicory root (Marshalls has so much good stuff that we randomly find). Nutrasumma Harvest Blend Plant Protein is also made without eggs, fish, shellfish, wheat, peanuts, and tree nuts. We also added chia seeds.

We really liked the Carrot Cake Protein smoothie. It doesn’t taste exactly like carrot cake, but it’s still good. I plan to make it often to change up my routine smoothies.

  3. This looks like a desert smoothie or a smoothie for an afternoon snack. My husband just had is wisdom tooth pulled so he is putting everything in the blender – even lasagna. I think I am going to make this for me and see what he thinks.

    • It would be a great afternoon snack. I know how your husband feels! I had all 4 wisdom teeth pulled at once and had to take a week off work. Please let me know if you make it & what your husband thinks.

    • I like this one because it’s easy to break up the routine of my normal smoothies. I usually drink them a couple times a week. It would be good with a thicker consistency!

  6. This smoothie sounds and looks delicious! I don’t drink much milk, but I don’t drink milk substitutes either. I’m quite positive regular milk doesn’t contain soy here in Switzerland.

  7. I’m totally pinning this for use later this fall after I’ve had my baby! It will be a perfect treat and hopefully help me keep my healthy eating in check so I don’t gain a ton of weight snacking like the last time I was breastfeeding!!
