Pumpkin muffins for food sensitivities (GF, SF, DF, paleo-friendly)

Tis the season for all of the pumpkin spice things.

I’m actually not very into anything pumpkin spice. Nikki isn’t really either, though she loves pumpkin bread. She wants to find a version that she can eat. Recently, she did find Simple Mills Pumpkin Almond Flour Muffin & Bread Mix. Not only is the mix certified gluten-, dairy-, and soy-free, it’s also free of corn, grains, gums, and emulsifiers. It is also non-GMO Project Verified and paleo-friendly.

As you can gather from the title, the mix can be used for muffins or loaf bread. The following is for the muffins.

Ingredients

-3 eggs

-1 c water

– 3 tbsp. oil (we used coconut oil)

Just 3 simple ingredients are needed.

Directions

(makes 12 muffins)

-Heat oven to 350 degrees

-Whisk eggs, water, and oil in large bowl. Add mix and whisk until well blended.

-Line muffin pan lightly with coconut oil or paper

-Spoon batter into muffin pan; fill each slot 2/3 full

-Bake 25-30 minutes or until a toothpick comes out clean

Let cool and serve! (If using paper liners, let them cool completely to avoid muffins sticking to the paper)

Verdict: the muffins were very moist and delicious! GFS approves!

Pro tip: Add Simple Mills Vanilla Frosting to the muffin tops. We didn’t have enough frosting to try this.

  1. These pumpkin muffins look so delicious. Usually pumpkin is not savored much as vegetable but this way I am sure pumpkin will be relished by taste buds.

    • The pumpkin was the strongest flavor and the almond flour didn’t seem to alter the taste. Of course, it could be different for everyone’s taste buds.

  3. Well, these muffins look super good! I love to hear about more gluten-free options. Though I am not sure I can get this brand here, so I will have to look at a similar one!

    • I’m not sure if Thrive Market or Vitacost deliver to you, but they are both online stores that have many brands and food products that are gluten-free. Enjoy Life is another good brand that has gluten-free products.

  4. Wow those loooked really moist! I find that’s making gluten free treats such as muffins or cake it can taste a little dry.

    • We were surprised how moist they were, especially with only 4 ingredients. My sister was a little heavy handed with the coconut oil and thinks that might have played a part in making it so moist.

    • It’s really yummy! Just a heads up: it’s not pumpkin spice, it’s just pumpkin, so don’t be disappointed by no spice flavor. 😀 Also, they’re best within the first couple of days after baking.

    • We were pleasantly surprised that it was only 90 calories. It was easy to follow and only has a few ingredients. Those are some of the best recipes. 🙂

    • LOL, they’re good. It’s pumpkin muffin and not pumpkin spice muffin, so there’s no spice flavor that you’d expect. If you know that going in, you won’t be as disappointed. I always get hungry when I write food related blogs. I’m hungry now replying to comments. lol

  6. Hello! I’m new to your blog! and I’m also new to all the gluten-free recipes, here where I live is not easy to find ready-made products free of gluten.

    • Hi Nati! It definitely can be difficult to find ready-made products with ingredients you need to avoid. We were pretty happy to find to find it. I’m not sure where all Vitacost and Thrive Market deliver to, but they’re online stores that have many items that are gluten-free. They both have this muffin mix. I have other recipes on my blog that you might be interested in. 🙂

    • LOL that’s all I could think when I saw them. I’m pretty limited in the kitchen, so my sister did the baking and I took pictures and wrote about it. 😀
