Homemade Sugar Cookies (GF, DF, SF, NF, TF, EF)

Galentine’s Day. Singles Awareness Day. Valentine’s Day. February 14th. Whatever you’re celebrating, eat some cookies. Better yet, make them yo self. Need to make sugar cookies that are gluten-, dairy-, soy-, egg-, tree nut-, and nut-free? Keep reading. I gotchu.

This blog is a few days late because Nikki had really bad back spasms last week. It’s been a rough few days, but she’s on the mend. Shoutout to my mom helping me out. I got her a Kitchenaid mixer for Christmas and she LOVES using it. She mixed all the ingredients for me. She rolled out the dough (the first time) and then I ended up making the rest of the cookies. It was the first time I’ve made cookies from scratch, so I feel pretty accomplished. πŸ˜€

Ingredients

(Yields 24)

2 c all purpose flour (we used King Arthur Gluten-Free All-Purpose flour)

1 c sugar

1 tsp baking powder

1 tsp salt

1/2 tsp baking powder (use only with egg substitute)

1/2 tsp lemon flavoring or 1 tsp vanilla

3/4 c shortening OR 5 tsp coconut oil (most shortening has soy)

2 eggs or egg substitute (we used VeganEgg; 2 tbsp mix & 1 cup water=1 egg)

 

Instructions

MixΒ  sugar, eggs/egg replacement, shortening/coconut oil, and flavoring thoroughly.

Combine dry ingredients; add gradually.

Blend well (dough will be pretty soft).

Cover and chill for one hour.

Heat oven at 400 degrees.

Flour surface and roll about 1/4 inch thick.

After cutting dough with cookies cutters, place on ungreased baking sheet.

Bake 6-8 minutes or until cookies are golden brown.

*Optional*

Frosting:

Melt 5 tbsp. butter alternative

Add 2 c powdered sugar and pinch of salt; stir

After stirring, add 2 additional cups of powdered sugar and 2 c of milk alternative.

Stir together until well blended.

Add vanilla or lemon flavoring; continue stirring

Add food coloring if desired.

Let frosting sit for several hours before decorating cookies.

We decided to skip making our own frosting. Instead we decorated with Wilton Sparkle Gel. Nikki pointed out that we should practice on the thinner cookies. This was a good idea as we were on the struggle bus for a few cookies. We also had sprinkles that we added to some cookies.

Verdict: we like the sugar cookies. I would try adding more vanilla flavoring to add more flavor.

  7. I hope Nikki is feeling better. I have been experiencing muscles spasms this week. This was the worst experience yet. I have to go back to work tomorrow and I’m still in so much pain.
