How to make Almond Nog Cookies (GF, DF, SF)

It’s egg nog season (for those of you who like it; I’ll pass). Nikki came across a recipe for egg nog cookies and really wanted to try it. She modified the recipe to meet her needs. Almond nog cookies will be a fun dessert to celebrate over the holidays.

Since we already had pre-made cookie mix, we decided to use that for this recipe. We used Our House Gluten-Free Cookie Mix. It’s sold out on their website, but it’s also available at WalMart. This mix is also egg-free, so this recipe can be made vegan by replacing eggs with egg replacement.

As always, all recipes are gluten-, soy-, and dairy-free.

Ingredients

-1 box of cookie mix

-1/2 cup almond nog

-2 large eggs (or egg replacement)

-3/4 c butter

-1 tsp baking powder

-2 1/4 c flour

-1 1/4 c sugar

-1 tsp vanilla

-1/2 tsp cinnamon

-1/2 nutmeg

-parchment paper or cooking spray

Instructions

-Preheat oven to 350 degrees. Line cookie sheets with parchment paper or cooking spray.

-In a mixing bowl, combine dry ingredients (minus sugar).

-In another bowl, mix sugar and butter (make sure it’s room temperature).

-Add wet ingredients to sugar and butter mix.

-Slowly add the dry ingredients to the wet ingredients. Beat at a low speed until blended.

-Place dough onto cookie sheet using a small scoop (an ice cream scoop will work), leaving an inch between cookies.

-Sprinkle cinnamon/nutmeg lightly (optional).

-Bake at 350 degrees for 10-15 minutes or until cookies are browned on the edges.

-Let cool before serving.

If you have additional cookie dough leftover, place in freezer in an airtight container.
