Banana pudding is one of Nikki’s favorite desserts. Since changing her diet to due to IBS, banana pudding is one of the dishes she’s missed. She’s been wanting to recreate a version that she could eat, but had a hard time finding the pudding.
While shopping at a local, small business here in Charlotte, she discovered Simply Delish’s Instant Vanilla Pudding. We finally had the missing agreement. Nikki decided to make it for July 4th.
As you may know, we prefer recipes that are quick, easy, and don’t need many ingredients. This recipe checks all three boxes.

While you can use alternative ingredients, we recommend Simply Delish since it is free of the Top 8 allergens. That’s also why we used Kinnikinnick vanilla wafers. If you use regular milk, you’ll need 1 2/3 cup.
