We were going to our mom’s family Christmas party where there was going to be a soup bar. My cousin asked Nikki what kind of soup she could have. Nikki doesn’t eat much soup anymore, so she went to Pinterest for some ideas on how to make something she could eat that met her dietary needs. She decided on Broccoli Cheddar Soup.
If you’ve been a GFS reader for a while, you know that we prefer quick, easy recipes. That’s why we decided to use the Instant Pot. Here’s the recipe for the Instant Pot Broccoli Cheddar Soup that we made.
As always, this recipe is gluten-, soy-, and dairy-free. This recipe can also be made vegan by substituting chicken broth with Not Chick’N Broth/Bouillon cubes.

Ingredients
-Broccoli
-Carrots
-1 container chicken broth (or chick’n broth/bouillon cubes)
-1 bag of dairy-free cheese
-Rice milk
-onion powder (optional)
Instructions
-Chop broccoli and carrots.
-If using onion powder, season after chopping vegetables.
-Place vegetables in Instant Pot
-Add chicken broth/broth alternative
-Add rice milk
-Add bag of dairy-free cheese
-Put Instant Pot on the “manual” option and cook for seven minutes. You can optionally pulsate the soup with a hand mixer.
For the rice milk, we didn’t measure it out. Nikki said it was less than half a cup. This recipe made 2 containers full; my sister decided to freeze one for our dad’s family Christmas party.
She let it sit for a few hours before eating it at the party and said it was “f—ing delicious!” She’s been eating it for the last few days and it still tastes just as good.
