This is the first blogpost since last fall. I had initially decided until after the holidays to update my blog. Then, I had some issues with GoDaddy and Google Authenticator that have finally been resolved. If you follow GFS on social media, you know I teased this recipe for Pimento Cheese a few months ago.
At long last, it’s finally here. Nikki has been wanting to make her own version of pimento cheese for a long time. In addition to being dairy-free, this recipe is also gluten-free, soy-free, nut-free, fish-free, shellfish-free, and low FODMAP.
Make this easy recipe for dairy-free Pimento Cheese!
Ingredients
For this recipe you’ll need:
-1 8 oz. bag of dairy-free shredded cheese
-1 tub of Violife just like Original Cream Cheese (7.05 oz/200g)
-1 small jar of pimentos
-2 large spoonfuls of mayo (to make this vegan, use egg-free mayo)
That’s all!
Nikki recommends Violife cheese alternatives because its her favorite. She has a hard time finding mayonnaise that she can eat that’s good. The Hellman’s Canola Mayonnaise Dressing is her preferred mayonnaise. You can substitute them with brands of your choice.
Make sure the cream cheese is softened before mixing.
We used our mom’s KitchenAid mixer to make the pimento cheese.

Directions
Combine entire jar of pimentos, entire bag of shredded cheese, and entire tub of cream cheese in large mixing bowl.
After throughly mixing on high speed these three ingredients, add in two large spoonfuls of mayonnaise.
Mix throughly on high speed.
Add more mayonnaise if desired.
You’re all done! It’s ready to serve right away. If you’re not serving instantly, place it in the refrigerator.

Verdict
Nikki loved this dip. Our mom liked the dip too. I’m not a fan of pimento cheese, so I left it for Nikki to enjoy. Since she was the one mostly eating it, it lasted for a week.
